Kate’s No-Bake Energy Balls

It’s true.  I do have a life outside of The Handle Bar.  When I’m not leading sweaty bike dance parties in the studio, I’m working at my full time job in public health social work, enjoying cocktails out with friends, and shamelessly watching The Real Housewives of [insert any and all Real Housewives seasons here].  I also really enjoy cooking, and the eating that follows.  After teaching an energy-packed early morning rooster ride or a post-work evening class, I need a little something to tide me over as I prepare a meal.  The recipe I’m going to share with you is a perfect post-workout snack that packs a great punch of protein, fiber, fat, whole grains, and is sure to satisfy your sweet tooth.

I wish I could take credit for this fantastic recipe, but I have to give full credit to one of The Handle Bar regulars, Kate Rafferty.  Kate has been taking my classes for a little over a year and a half (long before my Handle Bar days), and during the holiday season last year she was thoughtful enough to make these No-Bake Energy Balls for me.  (Sidenote: the best way to become a Handle Bar instructor teacher’s pet is to give us the gift of food.  We love eating.)  Not only was I very touched by her kindness, she also introduced me to my new favorite snack!

Kate’s No-Bake Energy Balls Recipe

Ingredients

  • 1 cup dry rolled oats
  • 1/3 cup chopped almonds
  • ½ cup Nutella
  • ½ cup all natural peanut butter
  • 1/3 cup all natural honey
  • ½ cup ground flax seed
  • ½ cup mini dark chocolate chips
  • 2/3 cup unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 1/3 cup dried cranberries (optional)

Instructions

  1. Combine all ingredients in a large bowl, mix well (I use a large spoon and then a mixer).
  2. Refrigerate the mix for 30 minutes.
  3. Using your hands, form balls about 2 inches in diameter.
  4. Store in the refrigerator.

I actually double the recipe when I make them, and I keep a big tupperware container of them in my refrigerator (Kate’s idea) to have a quick post-workout snack ready when I get home from teaching.  I brought these to our last Handle Bar instructor meeting, and all who tried them agreed they are fantastically delicious!
